Right. Use "Ich bin gegangen." (see below for more on gehen - fahren)
Gehen - gegangen
Fahren - gefahren
machen - gemacht

ge-something is always a good bet for past forms. And if you are in motion, use "bin" (am) instead of "habe" (have). "ich bin nach Berlin gegangen. Ich habe den Fluß Spree gesehen, die Mauer" (don't worry too much about all the articles. Die Mauer, der Fluß - den Fluß...)
"Frühstück essen" sounds awkward; just use "frühstücken". "Ich habe gefrühstück"

"Sehr mehr" = very more. "Viel mehr" or "vieles mehr".

"Entschuldigung für mein schlechtes Deutsch" - as I said, it's better than my French. Though I often find myself thinking of Italian lately. You are excused.

"gehen nach Köln". "Gehen nach" could be better expressed by "fahren nach". "Gehen nach" usually implies something lasting. "509 Stufen im Dom" - like French, somewhat: in dem ) im.

"Wir fahren nach Koblen und an den Rhein" "Die Loreley in St. xxx, eine Schiffahrt auf dem Fluß" or Schifffahrt or Schiff-fahrt of whatever. Bloody spelling reform.

Don't mention the war! I'm not sure what you saw, small, cloudy or otherwise, but it seems der Führer... hnnng... der Reiseführer hat ein Flügelhorn gespielt. Flügelhorn?
Alphorn? Mit dem Reiseführer ein X-Horn gespielt?

"Mein Deutsch ist scheiße. Ich höre auf." "halten" implies a stop of motion; to stop doing something - aufhören.

Oh, by the way, St. Goarshausen - this is funny. I was there last year. They have a nice festival there (actually there are quite a lot of festivals at the loreley - fantastic location for stuff like that). This year it was cancelled, because the bands sucked and no one bought tickets. Otherwise we almost could have met in that roughly-300-residents-at-best-place St. Goarshausen...
